Warm-up activity:

2. Reading: Andalusian recipes 
1. Gazpacho
Ingredients:
- 6 medium tomatoes
- 1 red bell pepper
- 1 small cucumber
- 1 small onion
- 2 garlic cloves
- 2 slices of bread
- 2 tablespoons of extra virgin olive oil
- 2 tablespoons of sherry vinegar
- Salt and pepper
- Water
Instructions:
1. Wash the tomatoes, bell pepper, and cucumber. Peel the onion and garlic.
2. Cut the vegetables into chunks, removing the seeds and stems from the bell pepper.
3. Place the vegetables and bread in a blender or food processor and blend until smooth.
4. Add the olive oil and vinegar and blend again.
5. Season with salt and pepper to taste.
6. If the mixture is too thick, add water until the desired consistency is achieved.
7. Chill in the refrigerator for at least an hour before serving.

2. Paella
Ingredients:
- 1 onion
- 2 garlic cloves
- 2 cups of rice
- 4 cups of chicken or vegetable stock
- 1 red bell pepper
- 1 green bell pepper
- 8-12 shrimp
- 1 cup of peas
- 1 tomato
- 2 teaspoons of smoked paprika
- 1 pinch of saffron
- Salt and pepper
Instructions:
1. Chop the onion and garlic and sauté in a large paella pan or deep skillet until softened.
2. Add the rice and stir to coat with the onion and garlic mixture.
3. Add the stock, paprika, saffron, and a pinch of salt and pepper. Bring to a boil and then reduce heat to a simmer.
4. Spread the rice out in the pan and add the chopped peppers and tomato.
5. Arrange the shrimp and peas on top of the rice, pushing them into the mixture slightly.
6. Continue to simmer until the rice is cooked and the liquid is absorbed, about 20-25 minutes.
7. Serve hot.

3. Flamenquines
Ingredients:
- 4 slices of thin pork loin
- 4 slices of serrano ham
- 4 slices of manchego cheese
- 2 eggs
- Bread crumbs
- Flour
- Olive oil
Instructions:
1. Place a slice of ham and a slice of cheese on top of each pork loin slice.
2. Roll each loin tightly around the filling and secure with toothpicks.
3. Beat the eggs in a shallow bowl.
4. Coat each flamenquin in flour, dip in the eggs, and then coat in bread crumbs.
5. Fry in hot olive oil until golden brown on all sides.
6. Remove toothpicks before serving.

4. Tortilla de camarones
Ingredients:
- 1/2 cup of chickpea flour
- 1/2 cup of water
- 1/4 teaspoon of baking powder
- 1/2 teaspoon of salt
- 1/2 pound of small shrimp
- 1 small onion
- Olive oil
Instructions:
1. Peel and devein the shrimp and chop them into small pieces.
2. Peel and chop the onion.
3. In a bowl, whisk together the chickpea flour, water, baking powder, and salt to make a batter.
4. Stir in the shrimp and onion.
5. Heat olive oil in a large skillet over medium-high heat.
6. Pour in the batter and cook until set and golden brown on one side, then flip and cook the other side.
7. Cut into wedges and serve hot or at room temperature.
